A Battle for My Health

Hi, My name is Nicki, I am the founder of New Eden microgreens. I hope you enjoy my story.

When I was 22 years old, my health took a terrifying turn. My body began producing grapefruit-sized abscesses on my ovaries that were filled with infection. My doctor would surgically remove one, only for another to grow back within weeks. By the time I reached the end of that battle, I had endured 5 massive abscesses. 

The final abscess ruptured, sending me into septic shock. When I arrived at the hospital, my blood pressure was 60/40 and my temperature was over 104 degrees. 

They rushed me to the ICU and tried IV antibiotics, but my body had so much infection that they had no other option but to perform emergency surgery. The surgeon later told me that when he opened me up, I was so full of infection he had to start cutting and pulling to save me. He said that as he took the infection out of me, my vitals started to take a turn back to going into normal range the more he took out.

That day, he saved my life by performing a radical hysterectomy and removing my appendix. But while the infection was gone, the aftermath lingered for years. I suffered chronic pain from scar tissue and what some doctors called post-septic shock syndrome as well as having micro adhesions on my intestines from him cutting through everything. My body was never quite the same. Within seven months, I had gained over 100 pounds. I didn’t recognize myself—physically or emotionally. I saw specialist after specialist, but no one could give me answers. I felt isolated, discouraged, and broken. I accepted that I had chronic pain and was now in full-blown menopause. I was simply surviving and silently suffering.

Then in 2023, I began battling a condition called H. pylori gastritis—another result of my weakened immune system. The bacteria caused severe inflammation in my throat, chest, and stomach. The bacteria was mutating so aggressively that it started to seep out through the pores of my chest and neck because it had nowhere else to go. This caused my skin to get porous and feel like sandpaper. After multiple rounds of antibiotics and acid blockers, I had lost my communication between my stomach and my esophagus. It had completely shut leaving me unable to eat or even drink water.

I then went to the U of M emergency room and was admitted due to not being able to get nutrition in my body.  Over the next 10 days in the hospital and through fasting I started to slowly reintroduce foods. That’s when I discovered that my body could no longer tolerate caffeine, sugar, gluten, or dairy. Everything I once consumed without issue was now making me sick.

My Husband had done research years earlier about the benefits of microgreens and told me if I took antibiotics and acid blockers again it was going to kill me. He told me he was going to look into which microgreen would heal H-Pylori. It ended up being broccoli microgreens. He put up the indoor garden as soon as we got home from the hospital and 10 days later was our first harvest. With hours of eating my first serving the constriction in my throat started to leave. The more I ate, the better I felt!! 

It has now been a year and a half and I feel better than I have ever! I have more clarity, more energy and feel everyday that my body is getting healthier. 

I had once lost all hope, convinced I wouldn’t make it out of the hospital but by God’s grace, I’m still here and now get to share my story of suffering—to help others find healing.

After seeing how much it was changing my health, I knew I had to go into business to help others get the resources they needed as well. 

Currently, I am a homeschool Mom and I take care of my Grandpa full time. In my spare time, I spend my time serving my community in other ways, going to church, growing microgreens and looking for opportunities to get this product out to people that need it the most. I care deeply about people – especially those in my own community. I look forward to growing this business and connecting with people in the coming months and years.
